chore: cap V8 heap at 1024 MB to reduce memory bloat

Adds --max-old-space-size=1024 to the serve command. Caps the V8 old-space
heap at 1 GB, forcing more aggressive GC before the process bloats and
preventing unbounded growth between restarts.
